Ingredients- Broccoli Soup – (Serves 4)
BROCCOLI SOUP – Method
Step 1 – Take a pan and add 1 tsp olive oil in it and wait for it to warm. Once done add chopped onion and 3-4 piece of garlic in it.
Step 2 – Further add 3 cups of water in the pan with 1 tsp of salt and a pinch black pepper. Cover the pan and let it boil for 2-3 minutes.
Step 3 – After 2-3 minute of boiling of onions add 250 gm broccoli in it and cover the pan again. Let it boil for 2-3 minutes. Make sure the Broccoli is boiled enough. if boiled, turn off the flame and let the pan cool down.
Step 4 – Once done, use mixer or grinder to grind and make the boiled ingredients into a paste.
Step 5 – Side by side take one more mixer grinder and grind 1 tsp wheat flour with 3 cups of milk and 1 tsp salt.
Step 6 – Take another pan and add butter or olive oil in it with medium flame. Add the prepared flour and milk mixture in it. Stir the pan until that paste becomes thick. Once the milk butter paste becomes thick then add the broccoli onion paste in it and let it boil for a minute or so.
Step 7 – At last add a pinch of cumin powder and black pepper in it to give it a delicious taste. – Your Broccoli Soup is ready to serve
